Berry Muffins Using Kleenmaid Combi Microwave Oven

What you will need:

  • 4 Cups S/R Flour
  • 1 Cup of Sugar
  • ¾ Cup of melted butter
  • 2 eggs
  • 1 ½  Cups of milk
  • 1 orange, zested and juiced
  • 1 ½ Cups Frozen berries

How to make it:

Mix the melted butter, eggs, orange juice and zest and milk.

In a separate bowl incorporate the flour and sugar, then add the wet ingredients to the flour and sugar mix, only mix until you can still see flour, then add the frozen berries (they must be frozen, otherwise the muffins go a grey/purple and they also don’t rise properly). Do not over mix the mixture, straight away place a spoonful of mixture into pre-greased muffin trays.

You can also substitute the berries with tin apples and add a little cinnamon, or use choc chips.

Because you are combining oven and microwave it takes roughly half the time of a normal oven,  I suggest using silicone bake ware for this function,  remove the trays and place the muffin tray straight onto the turntable,  select oven and microwave function,  select 450 watts, press the enter key (square button next to auto), then select the temperature at 170° press the enter key again, then select the time, it uses seconds so keep pressing until it gets to 11:00. press start.  If you would like a little extra colour at the end you can select  the grill function and cook for a further  3 minutes (optional).
