Mix the melted butter, eggs, orange juice and zest and milk.
In a separate bowl incorporate the flour and sugar, then add the wet ingredients to the flour and sugar mix, only mix until you can still see flour, then add the frozen berries (they must be frozen, otherwise the muffins go a grey/purple and they also don’t rise properly). Do not over mix the mixture, straight away place a spoonful of mixture into pre-greased muffin trays.
You can also substitute the berries with tin apples and add a little cinnamon, or use choc chips.
Press the steam and bake function, fill the jug with water and select 175° then set the minute minder for 23 minutes.
Because you are using a combination of steaming and baking, you end up with a lovely moist muffin with a crunch on top.
