Bitton Roast Beef – Meat Probe

What you will need:

  • 1.5 kg (approx.) of topside beef
  • 2 medium Spanish onions
  • A few sprigs of thyme
  • A few sprigs of rosemary
  • 2 bay leaves
  • 4 large carrots
  • 4 sticks celery
  • 1 whole bulb garlic, broken into cloves
  • ½ cup olive oil
  • 4 tbsp Bitton Orange Jelly
  • Sea salt and cracked pepper
  • Butter lettuce for garnish
  • Horseradish cream to serve

How to make it:

Remove your meat from the fridge one hour before cooking.

Rub the beef all over with olive oil, Bitton Orange Jelly and sea salt and pepper and set aside until required.

Place the prepared Beef with the Vegetables underneath onto the eziclean tray provided with the Kleenmaid oven, place into cold Kleenmaid oven, connect the food probe into the top left hand hole then insert the food probe into the middle part of the Beef, turn the Kleenmaid oven on and choose fan forced setting and set temperature to 210 degrees, at this stage the Kleenmaid oven will prompt you to choose what the internal temperature you would like to cook your meat at, (refer to user manual for more information).  For medium rare beef set temperature probe to 63 degrees. (this should take approx 1 hour).

It will beep and turn off when it has reached the desired internal temperature. 

Remove from the oven and allow the fillet to rest for 15 minutes before carving and serving with some horseradish.

Serve with dressed butter lettuce
