Charred Red Pepper & Chicken Pasta

What you will need:

  • 500g penne pasta
  • 500g chicken breast, sliced
  • 100ml olive oil
  • 2 red peppers
  • Juice of 1 lemon
  • 1 red onion, sliced
  • 250g cherry tomatoes, halved
  • 1/2c chopped parsley
  • 200g feta cheese
  • 2tsp oregano
  • ½ tsp garlic salt
  • Salt and pepper

How to make it:

Marinate chicken with oregano, garlic salt and 2tbs of olive oil.

Turn on the GCTEK9020 to level 9 and place the red peppers directly on the double ring element, turning them until skins are charred and blistered all over.

Put the red peppers in a bowl and cover with cling wrap for 10 minutes.

Peel off the blackened skins with your hands.  Remove seeds and cut into slices.

Heat 2tbs olive oil in a medium fry pan on level 9 of your GCTEK9020 and add chicken and onion.  Cook on each side for 2-3 minutes or until cooked through.  Remove from heat and stir through sliced peppers and set aside.

Place plenty of water in a large saucepan and bring to the boil.  Add penne pasta to boiling water and set the timer on your GCTEK9020 for 11 minutes.

Drain pasta.

Pour the pasta back into the pot and add the chicken and onion mixture, tomatoes, parsley, lemon juice, remaining olive oil and salt and pepper to taste. 

Stir and crumble feta into pasta.
