Cheesy Zucchini & Bacon Muffins

What you will need:

  • 125g melted butter
  • 2 cups self-rising flour
  • 1 ½ cups grated tasty cheese, plus ½ cup extra for sprinkling 
  • 1 cup milk
  • 1 egg
  • 1 zucchini, grated
  • 2 rindless bacon rashers, finely chopped
  • 1 small onion, finely chopped

How to make it:

Preheat oven to 200 degrees on the traditional cooking function. Line a 12-hole muffin tray with papers.

Heat 1 teaspoon of butter in a small fry pan on a medium heat.  Add bacon and onion and cook for 3 minutes or until lightly browned.  Allow to cool.

Squeeze excess liquid from zucchini. Combine flour, 1 ½ cups cheese, bacon mixture and zucchini in a large bowl.  Make a well in the centre. 

In a separate bowl whisk together egg, milk and butter. Add to the dry ingredients and fold through.

Divide mixture into muffin tray and sprinkle with extra cheese.  Set electronic timer for 15 minutes and bake for 15 minutes.  Leave to cool in trays for 5 minutes before transferring to a wire rack.
