Lightly whisk together eggs and cream in a bowl. Season with salt and pepper.
Heat a 22cm oven proof frying pan with oil on a medium heat. Cook the red pepper and chorizo until lightly brown then add the potato slices and spring onion.
Preheat oven grill to high.
Pour egg mixture over the ingredients in the pan, sprinkle over cheddar and feta cheese. Reduce heat to low and cook for 5 mins or until slightly set around the edge. Place the pan under the grill and cook for 2-3 minutes or until golden brown.
Cut into wedges and serve with salad greens.
