Place prawns, spring onion, coriander, chilli, garlic, ginger, soy sauce, sesame oil, cornflour, salt and pepper into a food processor.
Blitz for 5-10 seconds or until combined.
Transfer mixture to a bowl.
Spoon a heaped teaspoon of mixture in the centre of a wonton pastry.
Lightly brush the edges of pastry with water.
Fold pastry in half to form a rectangle and enclose filling.
Gently bring the two inner corners together and seal with a dab of water.
Half fill a medium size pot with oil and heat to 170 degrees celsius. Test with a thermometer if available. If not, drop in a cube of bread – this will take 20 seconds to turn golden brown. Oil is ready.
Fry wontons in batches until golden, then drain of kitchen paper.
Serve with sweet chilli sauce.
