In a dry pan, toast cumin, fennel and mustard seeds until aromatic. Crush in a mortar and pestle together with salt and pepper. Heat olive oil on a medium heat and sauté onions until softened, but not brown.Place bread in a small bowl and pour over water to soak. Squeeze out excess liquid.
Place mince, sausage meat, spices, bread, onion and 2 eggs in a bowl and combine.Divide mixture in 8 portions and roll a log shape in the centre of each pastry sheet. Use the remaining egg (beaten) to brush one side of the pastry. Roll pastry over and enclose to seal. Repeat with remaining ingredients.Freeze the rolls for 20 minutes to allow pastry to rest and for ease of slicing.Preheat your convection oven to 200 degrees or use the preset customized User Program on your OMFHS6010 oven.Slice sausage rolls and brush with egg and sprinkle over fennel and sesame seeds.Bake for 20-25 minutes or until golden brown.
