Hot Cross Muffins

What you will need:

  • 225g Butter
  • 200g Brown sugar
  • 150g Almond meal
  • 100g Buckwheat flour
  • 1tsp Ground mixed spice
  • 1 1/2tsp Baking powder
  • Pinch of Sea salt
  • 3 Eggs, beaten
  • 175g Dried fruit
  • 50g Dried cranberries
  • 1 Apple, diced  
  • 100g Icing sugar
  • 1 Orange, juiced

How to make it:

Heat the oven at 180C fan bake.  Line 2 muffin trays with paper cases.

Beat the butter and the sugar in a bowl until pale and creamy.

Add the eggs and 3 tablespoons of orange juice and mix until combined.

Sift in the almond meal, mixed spice, flour, baking powder and salt.  Fold until combined.

Cook the diced apple with a little sugar in the microwave for 3 minutes, then add to mixture along with dried fruits.

Spoon into muffin cases and bake for 35 minutes, then turn the heat down to 160 C and cook for further 25 minutes or until cooked.

Leave them to rest for 15 minutes in the muffin tray then place on a wire rack to cool completely.

Mix the icing sugar with the rest of the orange juice to form a thick icing and pipe it across the muffin and leave to set.
