Meringue Roulade

Best prepared in one of Kleenmaid’s Combi Oven. Click here for more info

What you will need:

  • 4 large egg whites
  • 1 tsp cream of tartar
  • ¾ cup of castor sugar
  • 1 ½ tsp cornflour
  • 1 tsp vanilla bean paste
  • ¼ cup icing sugar for dusting
  • 250 tub of mascarpone
  • 200g thick Greek yoghurt
  • 1tsp ground cardamom
  • ¼ cup crushed pistachios
  • ½ punnet strawberries or other fruit to your liking (stone fruit works well)
  • ½ jar of Bitton orange jelly or honey

How to make it:

Preheat the Combi Microwave Oven to 165° and line the stainless steel tray with baking paper.

Make sure your bowl is super clean and free of water, place the egg whites in a stainless steel bowl and start whipping with an electric beater until soft peaks start forming add the cream of tartar and sprinkle the sugar in slowly, when the mixture is thick and glossy add the vanilla and  cornflour and beat until combined.

Spread the mixture onto the prepared tray and bake for 25 minutes.  When it is ready turn out onto an icing sugar dusted tea towel (this stops the meringue sticking to the tea towel) and remove the paper straight away otherwise it sticks.  Leave to cool for 20 minutes.   Meanwhile slice the strawberries or other fruit and mix the mascarpone, yoghurt and cardamom together then spread onto the cooled meringue and top with the fruit, roll carefully and place on plate then refrigerate for 20 mins minimum.

Served with a drizzle of Bitton orange jelly or honey.
