¾ cup pistachio nuts
¼ cup fresh rosemary leaves
2 tablespoons fresh mint leaves
3 teaspoons fresh thyme leaves
1/3 cup grated parmesan cheese
1 tablespoon olive oil
2 lamb racks, French trimmed (8 cutlets each)
1 tablespoon honey
1 teaspoon Dijon mustard
¼ cup cream
1 tablespoon butter
Seal salt and freshly cracked pepper
Pre-heat Kleenmaid Combi Steam Oven at 200oC
Combine pistachio nuts, fresh herbs and parmesan cheese in a food processor and pulse until a fine crumb. Drizzle in olive oil to make the crumb just hold together. Brush lamb with combined honey and mustard, then press pistachio crumb firmly onto the top side of the rack.
Place lamb on a baking paper lined stainless steel baking tray.
Place in Kleenmaid Combi Steam Oven and cook for 30 mins.
