1 sheet of puff pastry
¼ pumpkin sliced
2 brown onions
½ Cup cubed feta
Good Olive oil
Salt and pepper
Start by placing the slices of pumpkin on a tray with the thyme, rosemary and whole garlic cloves. Cook by using the fan forced function on the Kleenmaid Oven at 190° for 35 minutes, you want a bit of colour to add extra flavour, set aside to cool.
Whilst the pumpkin is cooking, finely slice 2 brown onions and cook on induction 8 (or medium high) with a splash of olive oil, do this for about 3 minutes, then turn down to level 4 and set the timer for 20 minutes, set aside to cool.
Place a sheet of baking paper onto the glass tray, followed by the sheet of puff pastry then prick the pastry with a fork, this helps stop it puffing too much, then spread the onion mixture on the base, followed by the roasted pumpkin, (squash some of the roasted garlic cloves on as well), then top with the feta cheese and bake at 190° using the fan forced function with the bottom element, this will help brown the bottom of the puff pastry, set the minute minder for 30 minutes, check to make sure the bottom of the pastry in browned, then let rest for few minutes before slicing. You can slice into smaller pieces to serve as finger food or cute in big squares and serve with salad for lunch.
