Red Velvet Cupcakes

What you will need:

  • 125g butter
  • 250g caster sugar
  • 2 eggs
  • 250ml buttermilk
  • 1 tbs red food colouring
  • 1 tsp vanilla essence
  • ½ tsp baking soda
  • 1 tbs white vinegar
  • 250g self-raising flour
  • 40g cocoa powder
  • ½ tsp saltIcing
  • 250g cream cheese, softened
  • 50g butter, softened
  • 4 cups of icing sugar, sifted
  • 1 tbs lemon juice

How to make it:

Preheat oven to 170 degrees fan bake.In a large bowl, cream together butter and sugar until light and fluffy.Whisk in eggs and vanilla, then combine buttermilk and red food colouring.  Stir in the baking soda and vinegar.Gently fold through sifted flour, cocoa and salt.Spoon mixture into muffin cups and bake for 20-25 minutes.  Check cupcakes are ready by inserting a skewer.  If it comes out clean, remove from the oven and place on a wire rack to cool.  For the icing, beat together cream cheese and butter.  Gradually add icing sugar and lemon juice.Decorate cupcakes when completely cool.
