Brush chicken lightly with oil, and sprinkle with pepper and paprika.
Sear chicken in a hot pan, then place in a solid steel tray.
Place in Kleenmaid Combi Steam Oven and steam 100oC for 16 minutes or until chicken is cooked. Cover with foil to rest for 5 minutes.
Place prepared salad ingredients and mango into a large bowl and toss to combine.
Arrange salad on serving platter. Slice chicken and place over salad.
Place Dressing ingredients in a screw top jar and shake to combine.
Drizzle salad with Dressing just prior to serving. Scatter cashews over the top.
